Easy Thanksgiving Dinner for new mom

Thanksgiving...

My baby is busy playing at the breast like she sometimes does on the left side. Not sure why, as it seems to have plenty of milk. She does this thing where she latches, then pulls back and off with a smack sound, then latches and pulls off. It hurts after a while. I think she's done, but doesn't want to stop. Lol

Anyway, this got me thinking about Thanksgiving...you know, eating. I'm hungry right now! No one is doing anything on either side of the family, so K and I are planning a chill day at home.

I'd still like to make something and turkey is easy. Since it'll just be K and I, I'd like to make a small turkey breast. It'll be a simple, easy meal and I won't be able to do the really traditional stuff, because it'll all be gone, but here it goes...

Here's my plan:

Menu:
Rosemary and thyme roasted turkey breast
Baked sweet potatoes
Green beans with bacon
Macaroni and cheese
Vanilla ice cream with fried apples

Shopping list
1 turkey breast *fingers crossed that they have one*
Fresh rosemary
Fresh thyme
Butter
2 sweet potatoes
4 granny smith apples
1/2 gallon vanilla ice cream
Fresh green beans
Bacon

I already have everything else on hand

Brine the breast tonight.
Let it sit in water, sea salt, rosemary, and thyme overnight.
Cook per packaging the next day.

Wrap sweet potatoes in foil & bake until tender. Top with butter and *optional: brown sugar*

Prep green beans by snapping ends.
Wash well
Boil until tender & place in serving dish
Fry bacon (amount to taste)
Top beans with bacon

Make mac and cheese. I'm doing box kind for shortcut.

Peel and slice apples.
Place in a skillet with butter and brown sugar (enough to coat apples evenly)
Fry on medium, stirring constantly, until apples are tender. You can do these ahead, then warm up later.
Top ice cream with apple mixture

Voila, easy Turkey Day meal for 2-4.

The cool part- this can be done with baby. :-)
