Spinach and Carrot Soup

I promised my fit group I'd post this here today and nearly forgot!

Spinach and Carrot Soup

This is not the creamy variety, but super tasty.

What you'll need:

1 medium onion diced
5-7 carrots, peeled and sliced to equal 1 cup
1 bunch baby spinach, washed and coarsely chopped
1 TBSP olive oil
1 TBSP turmeric (or more as desired)
1 cup vegetable broth
9 cups water
Salt and pepper to taste

What you'll do:
1. In a large saucepan, over medium heat, saute onion until translucent (about 2 minutes).
2. Add carrots and saute until tender (about bout 3-4 minutes).
3. Add turmeric and broth and heat until aromatic.
4. Add water, spinach, salt and pepper.
5. Heat for about 20 minutes without boiling.
Serve with salad and a good quality cheese.
