Beautiful Quinoa Breakfast
I simply couldn't think of a better name for this plate of food. Seriously....look at all of those colors!
What you'll need:
1 hard boiled egg
Dash of chili powder
Salt & pepper to taste
1/2 cup quinoa (rinsed)
1 cup water
1/2 red bell pepper (coarsely chopped)
1/2 zucchini (diced)
1/2 onion (diced)
3 white mushrooms (chopped)
small bunch of spinach (stems removed, chopped)
1 tsp garlic (or one clove, minced)
1/2 yellow tomato (chopped)
1 tsp coconut oil
Dash of dried thyme
Salt & pepper to taste
Sprinkle of grated parmesan cheese
Diced mango
Strawberries
Blueberries
What to do:
1. Cook quinoa as directed.
2. Meanwhile, in a medium skillet, heat oil and garlic. Add onions and saute until translucent.
3. Add peppers, zucchini, mushrooms, and tomato. Saute until tender (about 3 minutes)
4. Add cooked quinoa and spinach. Mix well.
5. Season with thyme, salt and pepper.
6. Sprinkle with cheese.
7. Halve egg & sprinkle with salt, pepper & chili powder
Serve with fruit as shown.
