Spinach, not just for Popeye

Spinach...

I grew up hating spinach and it's no wonder considering the only experience I had with it was the dim green gelatinous muck that was dumped from a can into a saucepan and heated through, then transferred to my plate in what I considered a putrid flop.

I now love it. I'm the crazy lady all the check-out people hate seeing, with my cart three-fourths of the way filled with fresh produce that they have to manually punch in...and I always have several bunches of fresh, beautiful spinach in a bag.

Spinach is a beautiful green plant chock full of amazing nutrients.

1. Phytonutrients: these amazing nutrients, found only in plant foods such as spinach, help fight cancer, even preventing the growth of some cancers and they also help fight heart disease.

2. Iron: 100g of fresh spinach provides 25% of your daily iron!

3. Vitamin C: 100g of fresh spinach contains 47% of your daily vitamin C.

4. Vitamin K: 100g of spinach provides 402% of your daily vitamin K, which helps to build bone mass and it has also limits neuronal damage in the brain of Alzheimer's patients.

5. It's also a good source of omega-3 fatty acids, which are great for the skin.


Spinach is surprisingly easy to add to your meals and even the pickiest eaters won't know it's there, except for the added color. Here are a few ideas:

1. Chop it fine and add it to soups, chili, stews.
2.Saute it with eggs in the morning:
        3 large eggs, whisked
        2 bunches fresh spinach, chopped
        1/4 medium onion, diced
        2 white mushrooms
        1 clove garlic
        salt and pepper to taste
        1 tsp coconut oil
        Saute onions and garlic in coconut oil over medium heat, until onions are translucent.
        Add mushrooms and cook until tender.
        Add eggs and cook until just about done.
        Add spinach and cook until wilted.
        Salt and pepper as desired.

5. Make a green juice:
        1 bunch of spinach
        3 kale leaves
        2 apples
        1/2 cucumber
