Easiest, yummy "recipe" ever for folks like me who
1. Want to eat a healthy, satisfying breakfast.
2. Is only 1/2 awake in the morning due to night time nursing sessions with a very antsy toddler. (Or just because you really don't want to open that pack of Pop Tart crap)
Of course you can make these as simple as I did, or as complicated as you see fit.
You'll need:
1 cup Complete Pancake mix
1 very ripe organic banana
1/4 cup Wheat Germ (adds protein and iron)
1/2 cup water ( more or less to deaired consistency...everyone is different and hell, for me, every day is different. Sometimes I like them thin and sometimes I like them thick.
2 organic apples
Ground cinnamon
Peel and quarter apples.
Place in a steamer.
Steam until tender.
Mash banana in small bowl. Add all other ingredients for pancakes to bowl.
Carefully pour desired amount on a heated (prepared with cooking spray or butter) skillet.
Cook until bubbles for on top and sides appear firm.
Flip and continue to cook about another minute, or until golden one other side.
Don't flip more than once, or they will be chewy.
Sprinkle apples with cinnamon.
Top pancakes with maple syrup.
Voila.
A yummy, healthy breakfast.
