Holiday Hustle

The holidays are fast approaching adn as mothers, we tend to put our time and energy into everyone around us...Baking snacks for our child's class, a side dish for this dinner, making crafts for these people, etc.

I'm right there with you. I'm in crunch time as well, trying to meet deadlines for paid projects and I also like to make gifts for family and friends.

However, we also need to make time for ourselves.

Here's a recipe for your eating pleasure! ;-)



Fresh Tomato Pizza with Three Cheeses

4 Roma tomatoes, thinly sliced
2 TBSP snipped fresh parsley
2 cloves garlic, minced
1/2 tsp salt
1/2 tsp freshly ground black pepper
1 Boboli whole wheat pizza crust (or other refrigerated pizza dough) 
1 TBSP olive oil
4 oz mozzarella cheese, thinly sliced
1/2 cup crumbled Gorgonzola or other blue cheese
1/4 cup freshly grated Parmesan cheese
1/4 cup shredded fresh Italian (flat-leaf) parsley

  1. Preheat oven to 425. 
  2. In medium bowl combine tomato, snipped parsley, garlic, salt and pepper; set aside.
  3. Brush top of pizza crust with oil and add toppings. 
  4. Bake according to package, or until all cheese is melted and pizza is heated throughout. 
  5. Serve with fresh spinach salad and a drizzle of Italian dressing.
