Here's a recipe for your eating pleasure! ;-)
Fresh Tomato Pizza with Three Cheeses
4 Roma tomatoes, thinly sliced
2 TBSP snipped fresh parsley
2 cloves garlic, minced
1/2 tsp salt
1/2 tsp freshly ground black pepper
1 Boboli whole wheat pizza crust (or other refrigerated pizza dough)
1 TBSP olive oil
4 oz mozzarella cheese, thinly sliced
1/2 cup crumbled Gorgonzola or other blue cheese
1/4 cup freshly grated Parmesan cheese
1/4 cup shredded fresh Italian (flat-leaf) parsley
- Preheat oven to 425.
- In medium bowl combine tomato, snipped parsley, garlic, salt and pepper; set aside.
- Brush top of pizza crust with oil and add toppings.
- Bake according to package, or until all cheese is melted and pizza is heated throughout.
- Serve with fresh spinach salad and a drizzle of Italian dressing.
