Going Vegan

So, I've been becoming more and more vegetarian since I first read Michael Pollan's book, The Omnivore's Dilemma back in, I guess 2004.

I'd toyed with vegetarianism as a teen and again at different times during my eating disorder.

A lovely gal pal on FB has helped me decide to jump the cliff and truly give it a shot. NOT because she's trying to influence, but simply because of her enthusiasm. She is now vegan and it has been cool seeing her excitement with trying new foods.

With the baby being dairy-sensitive, I've already had to cut dairy (almost entirely) from my diet and to be honest, I thought dairy would he even harder to live without than my beloved steak. I'm surprised to find this isn't true.

Anyway, today was my first official day of attempting to be, not vegetarian, but vegan. It was actually easier than I thought and this is probably because I eat very little meat anyway, and of course I already cut dairy.

For breakfast I had Kashi Go Lean Crunch! With Silk pure vanilla almond milk.

For lunch, the boys and I made personal pizzas. I had pizza sauce, pesto, bell peppers, onion, mushroom, and garlic on mine (Didn't even miss the cheese), and a salad. 

I thought dinner was going to be hard, but it wasn't, despite the fact that I LOVE ribs and made them for the guys. For me, I made pasta with marinara, steamed broccoli, and roasted onion, tomatoes, and potatoes. It was delicious. I didn't even miss the ribs...

At least not too bad. ;-)

The contents of my refrigerator are not vegan friendly, but I plan to change that this week.

I'm stoked to know that there are cheese alternatives and that I can even have ice "cream." This let's me know I can do this.

Yesterday I even ate at BK and got a veggie burger with fries. Last night we ate at Mac's and I had their delicious vegan pizza called (appropriately), the Treehugger.

I've goofed a couple of times though...

Today I had marinara that I discovered had cheese in it. Did not know until after the fact. Who would have thought? It was roasted red pepper, not even a creamy style.
I also indulged in a few chocolates and only realized, -DUH!- they have milk in them. Lol

At first I was like, "today was a failure," but there is no sense in that. I'm looking at this as a journey, not a sprint. I'm bound to goof and that's okay. The fact is, I'm improving and I'm enjoying eating good foods that are good for Mama Earth as well.
