Crockpot Turkey Cutlets

I don't know about you, but I LOVE easy, healthy meals. If I can throw it all in one pot, even better. This recipe can be done in one pot, by adding the quinoa about 1/2 way through cooking, or you can cook it separately in the stove. 

So delicious. So easy. 

Turkey Cutlets with Veggies

1 lb turkey cutlets
3 carrots, chopped
1 medium onion
2-3 fresh white mushroom chopped
1-2 kale leaves chopped
1tsp cumin
Salt and pepper
Enough chicken broth to cover

Place all in a crockpot and cook on low for 8 hours or on high for 4 hours. (Or until turkey is cooked through)

Serve over cooked quinoa with a spinach salad on the side. 

A more savory option: 
Serve over mashed potatoes.
